Chocolate Truffled
As promised, here is the follow-up to Bar One, shaped into a chocolate truffle look-alike. It’s so decadent, I can’t believe it’s not bad for you. It’s similar to Bar One, the quantities are tweaked and I have added cocoa, dried sour cherries and pecans. Make some after work today, they make a great energy-filled snack.
Makes 8 – 1″ balls
10 dried dates
1/2 cup whole almonds
1/4 cup pecans
2 tablespoons cocoa powder, plus more for coating, optional
1 tablespoon coconut oil
pinch of salt
1/2 cup dried sour cherries, roughly chopped
Place dried dates in a small bowl and cover with boiling water, let sit a few minutes and then drain. In the bowl of a food processor combine dates, almonds, pecans, cocoa powder, coconut oil and salt. Process just until a soft ball forms – it will clump together on one side of the bowl. Add dried sour cherries and pulse until just combined. Roll mixture into small balls. If you like, you can roll them in cocoa powder, it looks pretty. However, it can be a bit messy. I only did it to make them more photogenic. Store them in a container in the fridge. They’re really satisfying when you feel low-energy and need a healthy snack.
